Our Bullet Train tour of Japan begins with a stop in Sendai. Being near several major fishing ports, Sendai is known for good sashimi, sushi, and sake. The first course is a choice of the Sake Sake Roll, sake cured salmon, avocado, daikon sprouts, tobiko & lemon zest, or the Rising Sun Roll, tempura shrimp, asparagus, & avocado wrapped in ahi tuna and drizzled with Alea Hawaiian sea salt and ponzu.
The second stop is Tokyo, a city where the fusion of cultures is more common than in the traditional cities. The Aoyama District specifically is very trendy and upscale. The second course is the Aoyama District Dinner, a true fusion of flavors, grilled salmon with a ginger and red onion compote served with crispy kabocha squash, sautéed sugar snap peas and enoki mushrooms in a dashi broth.
The third and final stop on our tour is Kyoto, Japan's old capital, full of temples, gardens, and delicious sweets made from kinako powder. The Philosopher's Path is a famous walking trail along a river in Kyoto once traveled by many famous poets and philosophers. The final course is the Philosopher's Path Dessert Plate, a black sesame and ginger ice cream paired with "kinako" roasted soy-frosted cookie and wasabi-chocolate dipped cookie
